Acai Berry Pancakes

You've heard of blueberry pancakes, but did you know you can also make acai berry pancakes? This recipe will give you light and fluffy pancakes with all the health benefits of acai. Makes approximately 8 pancakes.

Acai berry pancakes


  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • 1 cup milk
  • 2 tablespoons butter, melted
  • 1 cup fresh acai berries or thawed frozen acai berries


  1. In a large bowl, mix the flour, baking powder and salt.
  2. In another bowl, beat the egg with the milk. Whisk into the dry ingredients until a smooth batter is formed.
  3. Beat in the melted butter and stir in the acai berries.
  4. In a large non-stick pan, heat a small amount of butter over medium heat. Add a tablespoon of the batter per pancake, and cook for 3 minutes. Flip the pancake and cook for another 2-3 minutes.
  5. Serve with syrup or your favourite pancake topping.
